The monks at St. Joseph's Abbey started making preserves in 1954. The fruit is harvested at the peak of freshness and the perfect combination of fruit is used. For example, they use two kinds of strawberries in their strawberry preserves--one for its outstanding flavor and the other for its superb texture which remains throughout cooking.
They use a technique of vacuum pan cooking which results in better color and superior flavor. A combination of refined sugar and natural corn syrup is used to sweeten and preserve the fruit; each adds something to the product that the other alone would not achieve. No artificial colorings, flavors, high fructose syrup or preservatives are used.
This work gives the monks the opportunity to follow in Christ’ footsteps and share in His Divine work of creation and restoration, as well as, providing for their livelihood and for the care of the poor.
